The Original Pancit-Malabon
Pancit Malabon is a traditional Filipino dish usually served as a big meal at family gatherings. It comes from the region of Malabon in Metro Manila, Philippines. It is very similar to Pancit Palabok, but the main difference is that it is less saucy than other pancit dishes. Don’t worry; it’s not dry, but it’s enough for noodles to stick together.
It’s a stir-fried noodle dish made with thick rice noodles. Malabon is located in a coastal area and is famous for its seafood market. That’s why it’s my favourite dish. A lot of seafood ingredients are used as a topping, including shrimp, smoked fish flakes, and squid.
